Happy Father's Day

Hope all the dads, especially mine, had a great Father's Day. I know I did, despite the weather. Of course it was beautiful Friday and Saturday, and today. But on Sunday, when we were hosting the big family Father's Day BBQ, it was 55 degrees and raining. Oh well.

Our home computer is out of order, so you won't be seeing any updates on Fridays or over the weekend. That's right, I'm only going to update my blog from work for a while...  longer.

I don't mean to brag, but my roundabout designs are being featured as examples on Roundabout USA's web site. I ran across the site as I was looking for information and pictures of West Jordan.

So I had football on the brain today. Very excited that I will be able to watch possibly every single game my beloved Cornhuskers play this year thanks to transferring to the B1G TEN Conference.

So, I put together the most comprehensive schedule I could with the data available. Of course this version is in my resident Mountain Time Zone. If you would like one for your own time zone, let me know and I will make you one.

Favorite Recipe Friday

I know not posting the recipe until Saturday is becoming a habit, but I have a good excuse. I'm not telling what it is, but believe me, it was good. ;)

Spinach Salad

2 TBS extra-virgin olive oil
2 TBS red-wine vinegar
1 tsp Dijon mustard
1/4 tsp salt
Freshly ground pepper, to taste
1 (10-oz) bag triple-washed spinach, rinsed and torn into bit size pieces
2 slices bacon, crisp-cooked and crumbled
2 eggs, hard-cooked, peeled and cut into wedges

In a large bowl, whisk the oil, vinegar, mustard, salt and pepper. Add the spinach; toss to coat. Divide the salad among 4 plates, then sprinkle each serving with bacon and top with the eggs.

The Big Picture Download

Looks like we haven't taken the pictures off our camera in a few weeks. Here is what I found today...

Naomee fell asleep while she was having lunch with Britnee and I one weekend.

Benjamin put together his new Lego set and posed it all just like the picture on the box.

Nathan had his final band concert of the year. He is in the percussion section (back on the right, in the center of the cluster of three white shirts).

Then we had some fun in the lobby.

Nathan got a hug.

Then we had a visit from Spider-Man.

Cooper picked up his graduation gown and had a photo shoot.

Graduation Day finally arrived.

Britnee ran a 10K yesterday. She came in 5th in her division.

Our friend came in first in her division.

Britnee got a free massage after the race.

Ben got to play in a bounce house.

After the race, we checked out the grand opening celebration of a 20+ mile trail that links 4 towns.

The mountains are still covered in snow. After a few 80+ degree days, we dread more flooding is on the way. At least it is beautiful while it lasts up there.

Ben and Naomee played in the school playground next to the trail for a while. Ben tried this thing out until he was about to puke. Click on the picture for a better look at his face.
